When you’re craving tacos… in soup form

Taco Soup

  • 1-2 lbs. ground beef
  • 1 small onion, chopped
  • 1 pkg. taco seasoning
  • 1 8 oz. can tomato sauce
  • 3 cans chopped green chiles
  • 1 can pinto beans
  • 1 can black beans
  • 1 can kidney beans (we like light)
  • 2 cans hominy
  • 2 cans diced tomatoes
  • 1 1/2 cups water
  • salt and pepper to taste


  • grated cheese (Monterey Jack, Cheddar)
  • tortilla chips


  1. In a large pot, brown the hamburger and drain off excess grease.
  2. Add the chopped onion, taco seasoning and tomato sauce. Simmer for about 10 minutes.
  3. Add the rest of the ingredients to the pot. Bring to a boil, then simmer for about 20 minutes.
  4. Serve with cheese and tortilla chips.

Choir Cookies -Lemons never sounded so sweet

Double Lemon Delights

  • Servings: 4 Dozen
  • Difficulty: easy

  • 2 1/4 cups flour
  • 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 cup butter, softened
  • 3/4 cup sugar
  • 1 egg
  • 2 tbsp. grated lemon peel, divided
  • 1 tsp. vanilla
  • granulated sugar
  • 1 cup powdered sugar
  • 4-5 tsp. lemon juice


  1. Preheat the oven to 350º F.
  2. Combine the flour, baking powder, and salt.
  3. In another bowl, beat together the butter and sugar until light and fluffly.
  4. Beat in the egg, 1 tbsp. lemon peel and vanilla until well blended.
  5. Gradually mix in the flour mixture on low speed until well blended.
  6. Drop dough in 1 tbsp** dollops onto an ungreased cookie sheet, about 2 inches apart.
  7. Dip the bottom of a clean glass into granulated sugar and use it to flatten the cookies.
  8. Bake the cookies for 8-10 minutes.
  9. Allow the cookies to cool.
  10. Mix the powdered sugar, lemon juice and remaining lemon peel.
  11. Drizzle the lemon sugar mixture over the cookies.

**NOTE: You can make much larger cookies by using 1/4 cup of dough per cookie, spaced 3 in. apart. Baking time will be 12-14 minutes. This variation makes 1 dozen cookies. 🙂
