What We’re Making This Week

We love sandwiches in this house. We love hot grilled panini’s, greasy grilled cheese, cold cuts exploding with veggies… Sandwiches are my jam. This week for our panini’s we grilled up some onions in olive oil first. We put the onions, black forest ham, muenster cheese, tomatoes, avocado, and honey mustard onto whole wheat bread with mayo on the outside (rather than butter, it gives the bread a nice crunch!) and placed the sandwiches into the panini maker. YUM.

My husband and I were able to go to Italy about 5 years ago and we ate a TON of salad while we were there. It seemed like that just WAS the side dish there. I don’t remember any other options, haha. The thing about real Italian salads? They’re simple. Ridiculously simple. They literally throw a handful of arugula in a bowl and have lemons, balsamic vinegar, and olive oil on the table along with salt and pepper. That’s it! We did get tired of just arugula… But some places tossed on some tomatoes, red onion, feta and fresh from the vine olives and BAM. It was so good. So we often imitate these salads at home. Who knew a little olive oil, lemon, salt and pepper would be my favorite salad dressing when I grew up coating everything in ranch? 🙂

A couple years ago my husband got a smoker. Best. Investment. Ever. It is seriously awesome. We make all kinds of meat on that thing and it is amazing every time. Russ has gotten very good at smoking many different types of meats. Maybe I’ll start having him post his smoker tips on here or something. Mmmm. Anyway, this week burgers sounded good. Smoked ones. They turn out such an interesting pinkish/red color when they’re smoked, but the flavor is just phenomenal. If I can convince him to guest post about his smoking adventures, you may learn a tip or two this week!
