Taco Soup
Ingredients:
- 1-2 lbs. ground beef
- 1 small onion, chopped
- 1 pkg. taco seasoning
- 1 8 oz. can tomato sauce
- 3 cans chopped green chiles
- 1 can pinto beans
- 1 can black beans
- 1 can kidney beans (we like light)
- 2 cans hominy
- 2 cans diced tomatoes
- 1 1/2 cups water
- salt and pepper to taste
Toppings
- grated cheese (Monterey Jack, Cheddar)
- tortilla chips
Directions:
- In a large pot, brown the hamburger and drain off excess grease.
- Add the chopped onion, taco seasoning and tomato sauce. Simmer for about 10 minutes.
- Add the rest of the ingredients to the pot. Bring to a boil, then simmer for about 20 minutes.
- Serve with cheese and tortilla chips.
